Vanilla Chai Spice Oat Waffles from Sunday Bakers
Prep Time: 20 minutes
Cook Time: Approx. 20 minutes
(depending on waffle maker size and settings)
Ingredients:
-3 eggs
-1/3 cup neutral flavored oil such as olive oil or vegetable oil
-1 ½ cups unsweetened almond milk
-1/3 cup neutral flavored oil such as olive oil or vegetable oil
-1 ½ cups unsweetened almond milk
-2 tsp vanilla extract
-2 TBS sugar
-3 cups oat flour (you can either purchase oat flour or process 3 cups oats in a high powered blender or food processor)
-4 tsp baking powder
-3 Oat Mama Chai Spice Tea Bags
-2 TBS Oat Mama Brewer’s Yeast
-3 TBS Flax Seed
-Pinch of salt
Directions:
1. In a large bowl of a stand mixer or using a hand mixer, whisk the 3 eggs together on high speed for 2-3 minutes until light and fluffy in color and texture.
2. Stir in the vanilla extract, almond milk, oil and sugar and mix until well combined.
3. Cut the tops of the Oat Mama Chai Spice tea bags and grind the loose tea until fine by using a high powered blender, food processor or a mortar/pestle. 4. Add the oat flour, Oat Mama Brewer’s Yeast, Oat Mama Chai Spice Tea,
flax seed, baking powder and pinch of salt on top of the wet ingredients. Use a
fork to give the dry ingredients a stir together on top of the wet ingredients before fully incorporating.
5. Mix the dry and wet ingredients together until all combined and a batter forms.
6. Prepare your waffle maker with non-stick cooking spray and heat to a medium/high setting. Once heated, pour batter onto the waffle maker so that approx. ¾ of the waffle iron is covered evenly with the batter. Close the waffle iron and allow to cook for approximately 3-5 minutes, depending on the
waffle maker. The waffle is ready once the top is a light golden color.
7. Use a spatula or fork to gently transfer the waffle to a plate to cool (Oat waffles are a little more fragile than regular waffles).
8. Repeat the process with the remaining batter.
If you would like to store these in the freezer, wait until the waffles completely cool down and then store in a freezer safe bag or container (Suggestion to cut in half for easier storage). When ready to enjoy, remove the waffle from the freezer and warm up in the toaster (I usually run the waffle through
the toaster cycle twice).
Topping suggestions are nut butter or warm butter and honey.
